Wing Shooting | High Plains Quail x Crane Camp
Where morning light breaks over the Texas High Plains, an ancient ritual unfolds: Sandhill cranes, North America's oldest living gamebird, descend into fields that have drawn them for generations. Spoke Hollow invites you to join Texas Josh for an intimate four-day journey where traditional crane hunts and wild bobwhite pursuit lead to extraordinary evenings - from field-to-fire mastery at The Courthouse to refined innovation at the acclaimed Nicolett. This is more than hunting; it's the intersection of timeless sporting tradition and world-class culinary artistry, limited to those who understand that some experiences deserve to remain intimate.
Sandhill Crane: Dawn transforms these ancient birds into silhouettes against December skies, their six-foot wingspans casting shadows across fields that have hosted this ritual for generations. We hunt them as locals have since the first crops drew them here – in agricultural fields where tradition and opportunity merge. Their presence marks the pulse of High Plains seasons, their pursuit a privilege earned through understanding of land, weather, and patience.
Bobwhite Quail: In the afternoon light, CRP corners reveal their secrets to those who know how to read them. These carefully preserved pockets of native grass stand as testament to conservation’s success, where wild bobwhite still flush with heart-stopping suddenness before seasoned dogs. This isn’t manufactured hunting – it’s the raw authenticity of wild birds in native habitat, exactly as nature intended.

“There’s a moment in the December dawn when everything aligns – crane wings against first light, frost on crop stubble, steam rising from your coffee. That’s when you understand why we’re here. When afternoon finds us working CRP corners behind steady dogs, you’ll feel the rhythm of how locals have hunted these grounds for generations. But it’s at the table where everything comes full circle. This is why I left fine dining kitchens – to honor these ingredients from field to fire, to share moments where pursuit meets preparation, where tradition meets innovation. Some experiences can’t be manufactured; they have to be lived.” -Josh Crumpton
The Culinary Journey:
Each evening builds upon the day’s pursuit, creating a progression that honors both ingredient and craft:

Second Night
Josh continues the exploration at The Courthouse, diving deeper into the connection between land and table. Each dish tells a story of place, pursuit, and possibility, building on generations of High Plains hunting heritage.
Third Night
Your experience culminates at The Nicolett, where Chef Finn Walter – whose vision earned recognition among Bon Appetit’s top 50 new restaurants – transforms High Plains ingredients into sophisticated tribute. Here, local tradition meets contemporary artistry in a finale worthy of your pursuit.
