Sandhill Crane: Dawn transforms these ancient birds into silhouettes against December skies. We pursue them in the same agricultural fields that have drawn them for generations, relying on the tradition and patience required to earn this privilege.

Bobwhite Quail: In the afternoon, Conservation Reserve Program (CRP) corners reveal their secrets. We maintain these carefully preserved pockets of native grass as testament to conservation’s success. This is not manufactured hunting; it is the raw authenticity of wild bobwhite in native habitat.

  • First & Second Nights: Each evening builds on the day’s pursuit. At The Courthouse, Texas Josh translates the lessons of the field into carefully composed plates, diving deeper into the connection between land and table through Field-to-Feast Mastery.
  • Final Night: Your experience culminates at The Courthouse with the Crane Wellington.

• Texas hunting license with migratory bird endorsement
